About this tea
Introducing a flower guaranteed to give you the blues. (Thankfully, not the kind associated with dingy bars and failed relationships.) Quite the opposite: this flower brews the most amazing naturally blue tea, and it's sure to get everyone talking. The flowers of the butterfly pea (Clitoria ternatea), also called blue pea flower, have been used for generations to add colour to food and drinks across Southeast Asia. In Thailand, people have long loved it as a tea called nam dok anchan, often served with honey and lime. How to brew it: Steep about 12 flowers per serving in hot water for a deep, sapphire blue (use fewer for a softer cyan). Then add a few drops of lime or lemon juice and watch your glass change from blue to purple before your eyes. Pour it over ice, add a slice of lime, and get ready to say "mmm." Naturally caffeine-free, butterfly pea flower is perfect for show-stopping iced teas, lemonades and mocktails. Experiment, and get the blues today!
